Dark Chocolate Shortbread Cookies (Two Ways)

A tale of two cookies. Well, one cookie, two ways. The other day I was hunting for new products at the store and found these espresso morsels from @nestletollhouse. Coffee and chocolate are the best pairing, so of course I bought them. My original intent was to eat a few here and there for a quick treat…but we both know that wasn’t going to happen.

Fast forward to last night, when I’m in the kitchen making a recipe I’ve wanted to try for a while: double dark chocolate shortbread cookies. But this time, I’ve got a delicious twist to add. I prepared the dough according to the recipe, but before mixing in the chocolate chips, I split the dough in half. In one half, I mixed in regular dark chocolate morsels, and in the other half I mixed in espresso morsels. Jill doesn’t drink coffee (shocking, I know), but I wanted her to enjoy them as well. I chilled the dough overnight and finished them this evening.

What’s the verdict? 
In a word: delicious. In a few words: I want to eat them all with a cup of coffee in my other hand. Even the espresso chip version would be incredible with more coffee. The shortbread is crumbly and has a rich chocolate flavor, and the morsels give it a sweetness that it needs. I will be doubling the recipe next time so that we have more to share!
