An easy lunch you can put together quickly!
1 lb ground turkey (93%)
Salt & pepper
Shredded lettuce
Cheese
Trader Joe’s Jicama Wraps (or sub low carb tortillas)
Ketchup
Mustard
Dill Relish
Form four 1/2 inch thick patties from ground turkey. Just before grilling or cooking in a skillet, generously salt & pepper burger patties. Grill 8 minutes on direct medium heat, flipping halfway, or cook in skillet until internal temperature reaches 165. You can also cook ground turkey as crumbles.
Make burger sauce. Mix 2 parts ketchup to 2 parts mustard to 1 part relish. For example: 2 tbsp ketchup/2 tbsp mustard/1 tbsp relish.
Assemble tacos. Dice up burger patty (or take 1/4 of crumbled turkey) and divide over three jicama wraps. Top with lettuce, cheese, and burger sauce. Optional: add onions, avocado, pickles, whatever add-ons you like!
