An easy, flavorful sauce tops zucchini noodles for a low-carb, nutrient dense dinner!
1lb ground beef or turkey
1 24oz jar pasta sauce (preferably sugar free)
1 15oz can diced tomatoes (not drained)
2 cups diced mushrooms (optional)
Dried oregano & basil to taste
1 tsp crushed red pepper flakes (optional)
Zucchini noodles (make your own at home with a spiralizer or buy prepared from the store)
Brown meat in pan and drain excess fat. Add pasta sauce, diced tomatoes, red pepper flake, and mushrooms. Bring sauce to a simmer and allow mushrooms to cook down. Add dried oregano and basil to taste.
Sauté zoodles in a pan until tender. If using frozen zoodles, drain water after sautéing, then return zoodles to pan with a drizzle of olive oil and continuing cooking (stirring frequently) to cook off any remaining moisture. You may also choose to place cooked zoodles on paper towels before serving.
Spoon meat sauce over zoodles and sprinkle with parmesan. Serve with a simple side salad!
