Spinach Orzo Pasta Salad

Here it is! The recipe from my first live cooking demo with Michelle Hill of Southern Inspirations! I’ve also embedded the video below so you can follow along with us! I hope you enjoy it!

Pasta Salad:
1 cup dry orzo pasta
4 cups baby spinach leaves
1/2 cup feta cheese, crumbled
1 tbsp olive oil
1/2 cup Italian dressing (recipe below)

Optional (Pick one or two, or more!)
1 cup diced/sliced cucumber
1 cup grape tomatoes, halved
1/4 cup sun dried tomatoes
1/2 cup crumbed bacon
1/2 cup toasted nuts

Italian Dressing (makes 1 cup, pasta salad only calls for 1/2 cup)
1/2 cup olive oil or avocado oil
1/2 cup red wine vinegar
3 cloves garlic, minced
1 tsp dried oregano
1 tsp dried basil
1/2 tsp onion powder
1/2 tsp crushed red pepper (optional)
3/4 tsp salt
1/2 tsp pepper
1 tsp lemon juice

Directions
Cook orzo to al dente
Drain and add to mixing bowl, toss with 1tbsp olive or avocado oil to prevent sticking
Set aside to cool while preparing ingredients
Mix ingredients for Italian dressing in a jar (the recipe makes a double batch, so the jar helps store the other half for salads)
Chop spinach leaves to desired size
Crumble feta cheese
Slice or dice any of your desired extra mix-ins
Combine everything in bowl with orzo, adding more dressing if desired
Serve with protein and vegetable/fruit of choice!
