Cauliflower Gnocchi Sausage Skillet

Where are all my cauliflower gnocchi fans at? We always have a few bags on hand, and our favorite method is air frying them and serving them like a tater tot. But we are always open to new ideas and recipes that use them, so we’ve been wanting to make The Defined Dish’s Easy Sausage Cauliflower Gnocchi Skillet. I’m not a huge fan of Italian sausage, but we love the garlic herb chicken sausage from Trader Joe’s, so we grabbed a pack of it to use as a substitute in the recipe! I also wanted to stretch it, so we used all four links and I chopped up about 8oz. of baby bella mushrooms. We had mozzarella on hand, so that was the cheese we used. It was definitely a winner! Everything was perfectly coated by the sauce (a delicious mix of marinara and ghee), the fresh basil cut through the flavors, and the mushrooms gave that umami flavor that we love. And of course the cauli gnocchi were delicious!

Instead of cooking the links whole, cut them into 1/2 inch slices, then sauté
Slice mushrooms and cook with the sausage
Use mozzarella instead of parmesan
